Collection of clean (no bits of pod etc., no fungal contamination) seed is not necessarily straightforward.
For most species I suggest the following:
Cut the seed pod spike BEFORE it starts to split (dehisce). Most species this is 6 to 7 weeks after pollination.
Put the spike in water ( akin to putting flowrrs in a vase) and place in a position where it wont be knocked over and a position where there are no draughts / air movement. Back of a shed or garage is ideal. By the way orchid seed / seed pods have a characteristic smell (which most people find a bit unpleasant).
The seed pods will continue to develop for a couple of weeks. They will start to dehisce but if in a still environment you won’t lose much seed with most species.
When dehisced, gently shake over paper (using a paper cone if necessary) and collect on paper. Transfer to glass vial if you wish.
Drying - seed should be dried somewhat. Dried rice or silica gel can maintain a suitable dry environment. A sealed jar with desiccant in a fridge is ideal.
